Crunchy Quinoa-Cacao Bites

Due to popular demand, I am posting a more healthy, family-friendly recipes. Here’s another one of my family’s favorite snacks. It’s easy to make and hard to stop eating.

Crunchy Quinoa-Cacao Bites

INGREDIENTS:

  • 1/2 cup coconut oil melted but not hot

  • 1/2 cup cocoa powder

  • 1/2 cup natural almond butter

  • 1/4 cup maple syrup

  • 1/2 tsp vanilla extract

  • 1 cup puffed cereal ** I recommend puffed quinoa

INSTRUCTIONS:

  • Line a pan with parchment paper

  • Combine all ingredients, stirring well.

  • Roll into 1 inch balls and freeze for at least 10 minutes.

  • Keep them in the freezer and let them thaw briefly before eating.
