Crunchy Quinoa-Cacao Bites
Due to popular demand, I am posting a more healthy, family-friendly recipes. Here’s another one of my family’s favorite snacks. It’s easy to make and hard to stop eating.
Crunchy Quinoa-Cacao Bites
INGREDIENTS:
1/2 cup coconut oil melted but not hot
1/2 cup cocoa powder
1/2 cup natural almond butter
1/4 cup maple syrup
1/2 tsp vanilla extract
1 cup puffed cereal ** I recommend puffed quinoa
INSTRUCTIONS:
Line a pan with parchment paper
Combine all ingredients, stirring well.
Roll into 1 inch balls and freeze for at least 10 minutes.
Keep them in the freezer and let them thaw briefly before eating.
