Puffed Rice Bars

Another one of my favorite things! I made this recipe during our 2024 yoga teacher training, and we all loved it. It super easy, mostly healthy, and really tasty.

Puffed rice snacks with nuts, seeds, cranberries:

INGREDIENTS:

o   ½ cup almond butter

o   ½ cup honey

o   1 ½ cup puffed brown rice cereal

o   ½ cup puffed quinoa

o   ½ cup sliced almonds

o   ¼ cup roughly chopped dried cranberries

o  ¼ cup pumpkin or sunflower seeds

o   ¼ cup roughly chopped dried apricots

o   kosher salt

I always improvise a bit too ;) so you can always add some chia seeds, other nuts or dried fruits to satisfy your own tastes.

INSTRUCTIONS:

o   Spray an 8-inch square pan with cooking spray and line with parchment paper. Heat the almond butter and honey together in a small saucepan over low heat, stirring, until melted and combined.

o   Combine the rice cereal, quinoa, almonds, seeds, dried fruits and kosher salt in a medium size bowl. Pour the almond mixture into the dry moisture and stir until well combined. Transfer into the pan.

o   Wet your hands and press the cereal bar mixture down until it's flat and even, packing it tightly. Refrigerate for at least an hour.

o   Remove the mixture from the pan and cut into squares.

I kept my bars individually wrapped in parchment paper. Ideally they will stay stuck together but inevitably they will crumble a bit.
